Nerikiri is a traditional Japanese dessert, popularly called Wagashi, made from white bean paste and "Gyuhi." The dough is then wrapped and filled with a variety of fillings. The appearance of Nerikiri Wagashi changes according to the season, and its beauty is one of the key reasons people are drawn to it.


In this class, you will learn how to make four types of Nerikiri Wagashi, focusing on the theme of Spring, including Cherry Blossom, Chrysanthemum, Tsukubai (Stone Washbasin) and a featured Easter Chick. You will learn techniques for creating Wagashi with dual or mixed colours and how to shape them into round or rolled forms. You will also learn to use tools like a triangular rod, moulds, and Wagashi scissors to shape the Wagashi. This class is geared towards beginners who are new to Wagashi making. Each participant can create eight Nerikiri Wagashi of four different types. We will not demonstrate how to make the Nerikiri dough during the class, but we will provide a recipe for your reference.
